Consorteria Aceto Balsamico Tradizionale of Modena
Anyone who has tasted real Aceto Balsamico Tradizionale knows full well that it cannot be compared to any other condiment: it has a syrupy consistency, a complex and pleasantly penetrating bouquet, coupled with a well-balanced sweet and sour taste, rounded with a velvety finish. It may be used to flavour vegetables, meat, cheeses and even desserts. Alone it makes every dish unique, and for this reason it has become a must-have ingredient for gourmets all around the world.
In order to produce real traditional balsamic vinegar (which has nothing to do with the numerous worthless imitations that – alas! – may be found on sale) it is necessary to respect a highly detailed production regime. For this reason, the finest producers, tasters and promotors of the real Traditional Balsamic Vinegar came together – exactly 50 years ago – to found an association of which the guiding aim is to keep this tradition alive.
The “Consorteria dell’Aceto Balsamico Tradizionale di Modena” represents this association and since 1966 they have worked to safeguard the real traditional balsamic, in order to preserve its quality and raise awareness of a tradition that cannot be lost.
